First time trying Stegt Flæsk — completely converted
I had never tried Stegt Flæsk before this visit and I wasn't sure what to expect. The clean and fermented taste hit immediately and made sense of the dish in a way descriptions never quite do. Nordic berries is an ingredient I'd not encountered used quite like this before.
The a Christmas julefrokost feast setting added something to the experience — this kind of food makes sense in that environment. Danish New Nordic cuisine movement redefined fine dining globally in the 2000s. My server recommended cold buttermilk alongside and it was exactly right. I've been telling everyone to try Stegt Flæsk. Outstanding first encounter.
