Finding the best Rugbrød in the city — a personal search
I spent three months trying every version of Rugbrød I could find locally. The variation in quality is extraordinary. The best version handled pickled herring with genuine knowledge and the bright and pickled result was noticeably superior.
Danish New Nordic cuisine movement redefined fine dining globally in the 2000s. The winning restaurant had the right a Copenhagen smørrebrød lunch bar feel — unpretentious and focused on the food. æblemost apple juice was suggested correctly. Worth the search. When Rugbrød is made properly it's a completely different experience.
