First time trying Rugbrød — completely converted

I had never tried Rugbrød before this visit and I wasn't sure what to expect. The subtly sweet with berries taste hit immediately and made sense of the dish in a way descriptions never quite do. Nordic berries is an ingredient I'd not encountered used quite like this before.

The a Noma-inspired New Nordic restaurant setting added something to the experience — this kind of food makes sense in that environment. the julefrokost Christmas lunch is a major social event with traditional dishes strictly observed. My server recommended Danish lager alongside and it was exactly right. I've been telling everyone to try Rugbrød. Outstanding first encounter.
