You can taste history in Koldskål if you know what to look for. Danish New Nordic cuisine movement redefined fine dining globally in the 2000s. The subtly sweet with berries character reflects those layers — Nordic berries doesn't appear by accident; it came from a specific tradition.

The a Noma-inspired New Nordic restaurant setting made sense of it. You understand the food differently when the context is right. aquavit alongside is part of that story. Some food is just fuel. Koldskål, properly made, is something more. This version told the story well.
