I grew up eating Frikadeller and have strong opinions shaped by memory. The version here triggered that recognition in the first bite — the bright and pickled was right, rye bread rugbrød was handled the way it should be.

Danish New Nordic cuisine movement redefined fine dining globally in the 2000s. Growing up it was always a traditional Sunday brunch, which shaped my reference point entirely. æblemost apple juice alongside it is the only way it makes sense to me. It's hard to be objective about food you have emotional history with, but objectively: this is very good.
