Finding the best Frikadeller in the city — a personal search

I spent three months trying every version of Frikadeller I could find locally. The variation in quality is extraordinary. The best version handled fresh dill with genuine knowledge and the buttery and rich result was noticeably superior.

Danish New Nordic cuisine movement redefined fine dining globally in the 2000s. The winning restaurant had the right a Copenhagen smørrebrød lunch bar feel — unpretentious and focused on the food. Danish lager was suggested correctly. Worth the search. When Frikadeller is made properly it's a completely different experience.
