I spent three months trying every version of Flæskesteg I could find locally. The variation in quality is extraordinary. The best version handled Nordic berries with genuine knowledge and the buttery and rich result was noticeably superior.

Danish New Nordic cuisine movement redefined fine dining globally in the 2000s. The winning restaurant had the right a Christmas julefrokost feast feel — unpretentious and focused on the food. Danish lager was suggested correctly. Worth the search. When Flæskesteg is made properly it's a completely different experience.
