Best Æbleskiver I've had — and I've tried a few
Having eaten Æbleskiver at several restaurants over the past year, I can say this version is the best. The clean and fermented quality is more pronounced here than anywhere else I've tried. fresh dill is handled with real knowledge — you can taste the difference.
This is proper a Christmas julefrokost feast cooking, not an adaptation for foreign tastes. cold buttermilk was the obvious choice and the combination was perfect. Danish New Nordic cuisine movement redefined fine dining globally in the 2000s. Would return for this dish alone.
