First time trying Æbleskiver — completely converted
I had never tried Æbleskiver before this visit and I wasn't sure what to expect. The buttery and rich taste hit immediately and made sense of the dish in a way descriptions never quite do. fresh dill is an ingredient I'd not encountered used quite like this before.
The a Copenhagen smørrebrød lunch bar setting added something to the experience — this kind of food makes sense in that environment. Danish New Nordic cuisine movement redefined fine dining globally in the 2000s. My server recommended aquavit alongside and it was exactly right. I've been telling everyone to try Æbleskiver. Outstanding first encounter.
