The Vepřo-knedlo-zelo I grew up eating — memory as a review
I grew up eating Vepřo-knedlo-zelo and have strong opinions shaped by memory. The version here triggered that recognition in the first bite — the subtly tangy from pickles was right, Czech beer was handled the way it should be.
Czech cuisine is inseparable from beer culture, one of the world's highest per-capita consumption nations. Growing up it was always a traditional Czech hospoda, which shaped my reference point entirely. Czech Pilsner Urquell alongside it is the only way it makes sense to me. It's hard to be objective about food you have emotional history with, but objectively: this is very good.
