First time trying Svíčková — completely converted

I had never tried Svíčková before this visit and I wasn't sure what to expect. The subtly tangy from pickles taste hit immediately and made sense of the dish in a way descriptions never quite do. pork knuckle is an ingredient I'd not encountered used quite like this before.

The a Prague pub restaurant setting added something to the experience — this kind of food makes sense in that environment. Czech cuisine is inseparable from beer culture, one of the world's highest per-capita consumption nations. My server recommended slivovitz plum brandy alongside and it was exactly right. I've been telling everyone to try Svíčková. Outstanding first encounter.
