Cultural discovery through Nakládaný Hermelin

Nakládaný Hermelin opened a door into a cuisine I'd previously known almost nothing about. The subtly tangy from pickles flavours are unlike anything in my usual rotation and I mean that positively. bread dumplings served alongside everything evolved as the perfect vehicle for rich sauces. Understanding that context made the dish taste different — richer with meaning.

I learned that pork knuckle is central to this cuisine's character, not just a seasoning. The a traditional Czech hospoda setting was authentic and helpful for understanding what I was eating. Moravian wine completed the picture. A genuinely educational meal.
