I ate Goulash at three different restaurants in the same week to compare. The results were illuminating. The use of Czech beer varied significantly — only one got it right. The hearty and deeply savoury profile should be consistent but interpretation differs widely.

Czech cuisine is inseparable from beer culture, one of the world's highest per-capita consumption nations. The best version came from a traditional Czech hospoda, which felt authentic. Czech Pilsner Urquell was offered at all three but only one knew how to serve it properly. The gap between mediocre and excellent Goulash is larger than you'd think.
