I spent three months trying every version of Vaca Frita I could find locally. The variation in quality is extraordinary. The best version handled sofrito tomato base with genuine knowledge and the savoury and deeply satisfying result was noticeably superior.
Cuban cuisine reflects Spanish, African, and Caribbean indigenous influences. The winning restaurant had the right a family Sunday lechón feel — unpretentious and focused on the food. Cristal beer was suggested correctly. Worth the search. When Vaca Frita is made properly it's a completely different experience.
