Street food Vaca Frita — the authentic version

The best Vaca Frita I've ever had came from a street stall, not a restaurant. The sweet from caramelised plantain intensity was completely different — more direct and uncompromised. plantain was used without hesitation, the way it should be.

paladares are privately owned Cuban restaurants that developed as an alternative to state food service. The a family Sunday lechón setting meant eating standing up or on a low stool, which is how this food is supposed to be encountered. guarapo sugarcane juice was sold right next to it. Don't wait to find the 'right' restaurant. Find the street version first.
