Best Vaca Frita I've had — and I've tried a few

Having eaten Vaca Frita at several restaurants over the past year, I can say this version is the best. The savoury and deeply satisfying quality is more pronounced here than anywhere else I've tried. slow-roasted pork is handled with real knowledge — you can taste the difference.

This is proper a family Sunday lechón cooking, not an adaptation for foreign tastes. Cuba Libre was the obvious choice and the combination was perfect. paladares are privately owned Cuban restaurants that developed as an alternative to state food service. Would return for this dish alone.
