You can taste history in Ropa Vieja if you know what to look for. paladares are privately owned Cuban restaurants that developed as an alternative to state food service. The sweet from caramelised plantain character reflects those layers — Mojo marinade doesn't appear by accident; it came from a specific tradition.

The a family Sunday lechón setting made sense of it. You understand the food differently when the context is right. Cuba Libre alongside is part of that story. Some food is just fuel. Ropa Vieja, properly made, is something more. This version told the story well.
