Best Ropa Vieja I've had — and I've tried a few
Having eaten Ropa Vieja at several restaurants over the past year, I can say this version is the best. The sweet from caramelised plantain quality is more pronounced here than anywhere else I've tried. Mojo marinade is handled with real knowledge — you can taste the difference.
This is proper a roadside food stall cooking, not an adaptation for foreign tastes. Cuba Libre was the obvious choice and the combination was perfect. paladares are privately owned Cuban restaurants that developed as an alternative to state food service. Would return for this dish alone.
