Street food Ropa Vieja — the authentic version
The best Ropa Vieja I've ever had came from a street stall, not a restaurant. The citrusy from mojo intensity was completely different — more direct and uncompromised. Mojo marinade was used without hesitation, the way it should be.
paladares are privately owned Cuban restaurants that developed as an alternative to state food service. The a Cuban café abroad setting meant eating standing up or on a low stool, which is how this food is supposed to be encountered. Cuba Libre was sold right next to it. Don't wait to find the 'right' restaurant. Find the street version first.
