First time trying Moros y Cristianos — completely converted

I had never tried Moros y Cristianos before this visit and I wasn't sure what to expect. The sweet from caramelised plantain taste hit immediately and made sense of the dish in a way descriptions never quite do. Mojo marinade is an ingredient I'd not encountered used quite like this before.

The a roadside food stall setting added something to the experience — this kind of food makes sense in that environment. Cuban cuisine reflects Spanish, African, and Caribbean indigenous influences. My server recommended Cristal beer alongside and it was exactly right. I've been telling everyone to try Moros y Cristianos. Outstanding first encounter.
