You can taste history in Moros y Cristianos if you know what to look for. paladares are privately owned Cuban restaurants that developed as an alternative to state food service. The earthy and hearty character reflects those layers — black beans doesn't appear by accident; it came from a specific tradition.

The a roadside food stall setting made sense of it. You understand the food differently when the context is right. guarapo sugarcane juice alongside is part of that story. Some food is just fuel. Moros y Cristianos, properly made, is something more. This version told the story well.
