Cultural discovery through Lechón Asado

Lechón Asado opened a door into a cuisine I'd previously known almost nothing about. The sweet from caramelised plantain flavours are unlike anything in my usual rotation and I mean that positively. paladares are privately owned Cuban restaurants that developed as an alternative to state food service. Understanding that context made the dish taste different — richer with meaning.

I learned that slow-roasted pork is central to this cuisine's character, not just a seasoning. The a Cuban café abroad setting was authentic and helpful for understanding what I was eating. mojito completed the picture. A genuinely educational meal.
