Holiday memory — Sweet and Sour Pork that transported me back

I first ate Sweet and Sour Pork on a trip five years ago and have been searching for a version this good ever since. This restaurant finally delivered the bold and numbing quality I remembered. Shaoxing wine was handled correctly — something most restaurants here get slightly wrong.

Chinese cuisine encompasses eight major regional schools with distinct ingredients and techniques. It was the a bustling dim sum hall memory that I was really chasing and this recreated it. Tsingtao beer was offered and brought the whole experience together. Some dishes are attached to a time and place. This one finally restored that attachment.
