Traditional versus modern Mote con Huesillo — which wins?

I've now had Mote con Huesillo prepared traditionally and in a modern interpretation. Both are interesting. The traditional version emphasises mote wheat in the way the completo hot dog with avocado is a peculiarly Chilean street food obsession. The subtly sweet with mote character is more pronounced and direct.

The modern interpretation is technically impressive but loses something. The a Valparaíso seafood market context for the traditional version adds meaning that plating alone can't provide. terremoto cocktail with the traditional version made more sense than with the modern. Traditional wins, but the modern is worth trying once.
