Street food Humitas — the authentic version
The best Humitas I've ever had came from a street stall, not a restaurant. The smoky and herbal intensity was completely different — more direct and uncompromised. pebre herb salsa was used without hesitation, the way it should be.
Chilean cuisine reflects the extraordinary length of the country with Pacific seafood, Andean ingredients, and Patagonian lamb all defining different regions. The a Valparaíso seafood market setting meant eating standing up or on a low stool, which is how this food is supposed to be encountered. Carménère was sold right next to it. Don't wait to find the 'right' restaurant. Find the street version first.
