Humitas exceeded every expectation

I went in with low expectations — I'd had mediocre versions before. What I found was Humitas made with real commitment to merkén smoked chilli and technique. The fresh from the sea result was more complex and satisfying than anything I'd had before.

Chilean cuisine reflects the extraordinary length of the country with Pacific seafood, Andean ingredients, and Patagonian lamb all defining different regions.
