Curanto opened a door into a cuisine I'd previously known almost nothing about. The fresh from the sea flavours are unlike anything in my usual rotation and I mean that positively. Chilean cuisine reflects the extraordinary length of the country with Pacific seafood, Andean ingredients, and Patagonian lamb all defining different regions. Understanding that context made the dish taste different — richer with meaning.

I learned that pebre herb salsa is central to this cuisine's character, not just a seasoning. The a family asado setting was authentic and helpful for understanding what I was eating. terremoto cocktail completed the picture. A genuinely educational meal.
