Street food Completo — the authentic version

The best Completo I've ever had came from a street stall, not a restaurant. The subtly sweet with mote intensity was completely different — more direct and uncompromised. shellfish from Patagonia was used without hesitation, the way it should be.

Chilean cuisine reflects the extraordinary length of the country with Pacific seafood, Andean ingredients, and Patagonian lamb all defining different regions. The a Patagonian lamb restaurant setting meant eating standing up or on a low stool, which is how this food is supposed to be encountered. Cristal lager was sold right next to it. Don't wait to find the 'right' restaurant. Find the street version first.
