Best Peameal Bacon I've had — and I've tried a few
Having eaten Peameal Bacon at several restaurants over the past year, I can say this version is the best. The sweet and savoury from maple quality is more pronounced here than anywhere else I've tried. Arctic char is handled with real knowledge — you can taste the difference.
This is proper an east coast seafood shack cooking, not an adaptation for foreign tastes. Canadian rye whisky was the obvious choice and the combination was perfect. maple syrup production is a seasonal Quebec ritual celebrated at family sugar shacks. Would return for this dish alone.
