I spent an afternoon making Lok Lak from scratch following a traditional recipe. Getting banana blossom right was the main challenge — it's not as straightforward as it looks. The subtly fermented and umami result was rewarding once I got it right.

prahok is a uniquely Cambodian ingredient that foreigners find challenging but locals consider essential. I served it with sugarcane juice as the recipe suggested and the pairing made sense. It took longer than I expected but the outcome was genuinely satisfying. Making Lok Lak yourself gives you a new appreciation for what goes into it at a restaurant.
