Cultural discovery through Banh Chiao

Banh Chiao opened a door into a cuisine I'd previously known almost nothing about. The subtly fermented and umami flavours are unlike anything in my usual rotation and I mean that positively. Cambodian cuisine shares roots with Thai and Vietnamese cooking but has its own distinct identity shaped by Khmer culture. Understanding that context made the dish taste different — richer with meaning.

I learned that kroeung lemongrass paste is central to this cuisine's character, not just a seasoning. The a Siem Reap market food stall setting was authentic and helpful for understanding what I was eating. palm wine completed the picture. A genuinely educational meal.
