The best Mohinga I've ever had came from a street stall, not a restaurant. The savoury and slightly sour intensity was completely different — more direct and uncompromised. fermented tea leaves laphet was used without hesitation, the way it should be.

laphet fermented tea leaf salad is a uniquely Burmese ingredient used in salads and as a stimulant snack. The a mohinga street stall at dawn setting meant eating standing up or on a low stool, which is how this food is supposed to be encountered. fresh lime soda was sold right next to it. Don't wait to find the 'right' restaurant. Find the street version first.
