I ate Khauk Swè Thohk at three different restaurants in the same week to compare. The results were illuminating. The use of dried shrimp varied significantly — only one got it right. The complex and earthy profile should be consistent but interpretation differs widely.

mohinga fish noodle soup is considered the national dish and eaten as breakfast across the country. The best version came from a traditional Burmese home breakfast, which felt authentic. toddy palm juice was offered at all three but only one knew how to serve it properly. The gap between mediocre and excellent Khauk Swè Thohk is larger than you'd think.
