Cultural discovery through Khauk Swè Thohk

Khauk Swè Thohk opened a door into a cuisine I'd previously known almost nothing about. The savoury and slightly sour flavours are unlike anything in my usual rotation and I mean that positively. mohinga fish noodle soup is considered the national dish and eaten as breakfast across the country. Understanding that context made the dish taste different — richer with meaning.

I learned that lemongrass is central to this cuisine's character, not just a seasoning. The a Mandalay restaurant setting was authentic and helpful for understanding what I was eating. fresh lime soda completed the picture. A genuinely educational meal.
