I spent an afternoon making Scotch Egg from scratch following a traditional recipe. Getting HP sauce right was the main challenge — it's not as straightforward as it looks. The deeply satisfying result was rewarding once I got it right.

pub food culture has undergone a renaissance in the gastropub era. I served it with dry cider as the recipe suggested and the pairing made sense.
