I ate Acarajé at three different restaurants in the same week to compare. The results were illuminating. The use of manioc flour farinha varied significantly — only one got it right. The sweet from tropical fruits profile should be consistent but interpretation differs widely.

feijoada black bean stew is a national dish with African and Portuguese roots. The best version came from a churrascaria rodizio steakhouse, which felt authentic. Brahma lager was offered at all three but only one knew how to serve it properly. The gap between mediocre and excellent Acarajé is larger than you'd think.
