Decent Silpancho — nothing more, nothing less
Silpancho at this place was fine. The hearty and filling flavour was there but not distinguished. quinoa was present in the right quantities but without the care that makes the difference. You can taste when something is being made to a formula.
Bolivia preserves some of the most ancient Andean food traditions including chuño freeze-drying which dates to pre-Inca times. The a traditional Andean home setting was generic rather than immersive. api maize drink warm was offered but not explained. If you're in the area and want Silpancho it'll do. If you're going out of your way, look elsewhere.
