Salteñas exceeded every expectation

I went in with low expectations — I'd had mediocre versions before. What I found was Salteñas made with real commitment to ají amarillo and technique. The hearty and filling result was more complex and satisfying than anything I'd had before.

Bolivia preserves some of the most ancient Andean food traditions including chuño freeze-drying which dates to pre-Inca times. The a market lunch counter was exactly right for this kind of eating. singani grape spirit was offered as the natural choice and it elevated everything. When a dish you thought you knew surprises you completely, that's worth celebrating. Five stars without hesitation.
