The best Shorshe Ilish I've ever had came from a street stall, not a restaurant. The pungent from mustard oil intensity was completely different — more direct and uncompromised. hilsa fish was used without hesitation, the way it should be.

hilsa fish is a cultural icon in Bangladesh — its seasonal availability is a national event. The a Sylheti tea estate setting meant eating standing up or on a low stool, which is how this food is supposed to be encountered. jhal muri puffed rice snack was sold right next to it. Don't wait to find the 'right' restaurant. Find the street version first.
