Cultural discovery through Mishti Doi

Mishti Doi opened a door into a cuisine I'd previously known almost nothing about. The pungent from mustard oil flavours are unlike anything in my usual rotation and I mean that positively. Bengali cuisine shares roots with West Bengal India but has distinct Muslim food traditions. Understanding that context made the dish taste different — richer with meaning.

I learned that panch phoron five-spice is central to this cuisine's character, not just a seasoning. The a Sylheti tea estate setting was authentic and helpful for understanding what I was eating. lassi completed the picture. A genuinely educational meal.
