Best Hilsa Fish Curry I've had — and I've tried a few

Having eaten Hilsa Fish Curry at several restaurants over the past year, I can say this version is the best. The earthy from poppy seeds quality is more pronounced here than anywhere else I've tried. panch phoron five-spice is handled with real knowledge — you can taste the difference.

This is proper a Sylheti tea estate cooking, not an adaptation for foreign tastes. jhal muri puffed rice snack was the obvious choice and the combination was perfect. Bengali cuisine shares roots with West Bengal India but has distinct Muslim food traditions. Would return for this dish alone.
