Qutab rarely gets the international recognition it deserves. The richly layered complexity is genuine, not simple, and the technique involved in using quince correctly takes real skill.

Azerbaijani cuisine reflects Turkic, Persian, and Caucasian influences meeting at a historical crossroads.
