Cultural discovery through Plov
Plov opened a door into a cuisine I'd previously known almost nothing about. The fragrant and saffron-gilded flavours are unlike anything in my usual rotation and I mean that positively. Azerbaijani cuisine reflects Turkic, Persian, and Caucasian influences meeting at a historical crossroads. Understanding that context made the dish taste different — richer with meaning.
