Honest verdict on Pakhlava — good but not exceptional

Pakhlava here was solidly made — richly layered without anything to complain about. pomegranate was present and handled reasonably. But something was missing from the depth that this dish should have.

Azerbaijani cuisine reflects Turkic, Persian, and Caucasian influences meeting at a historical crossroads. The a Baku meykhana restaurant atmosphere was pleasant enough. doshab grape molasses was available and a good suggestion. For a reliable version of Pakhlava this works. For an exceptional one, I'd keep looking. Three stars.
