I ate Pavlova at three different restaurants in the same week to compare. The results were illuminating. The use of Vegemite varied significantly — only one got it right. The subtly sweet with native fruits profile should be consistent but interpretation differs widely.

Australian cuisine has absorbed multicultural influences and developed a distinct contemporary style. The best version came from an outback pub meal, which felt authentic. flat white coffee was offered at all three but only one knew how to serve it properly. The gap between mediocre and excellent Pavlova is larger than you'd think.
