Finding the best Pavlova in the city — a personal search
I spent three months trying every version of Pavlova I could find locally. The variation in quality is extraordinary. The best version handled macadamia nut with genuine knowledge and the fresh and light result was noticeably superior.
Australian cuisine has absorbed multicultural influences and developed a distinct contemporary style. The winning restaurant had the right a Melbourne brunch café feel — unpretentious and focused on the food. flat white coffee was suggested correctly. Worth the search. When Pavlova is made properly it's a completely different experience.
