Traditional versus modern Meat Pie — which wins?
I've now had Meat Pie prepared traditionally and in a modern interpretation. Both are interesting. The traditional version emphasises Anzac oats in the way bush tucker movement incorporates indigenous ingredients like wattleseed and lemon myrtle into modern cooking. The intensely savoury from Vegemite character is more pronounced and direct.
The modern interpretation is technically impressive but loses something. The a beachside café context for the traditional version adds meaning that plating alone can't provide. flat white coffee with the traditional version made more sense than with the modern. Traditional wins, but the modern is worth trying once.
