You can taste history in Locro if you know what to look for. Argentina consumes more beef per capita than almost any other country. The herbal and garlicky character reflects those layers — yerba mate doesn't appear by accident; it came from a specific tradition.

The a Buenos Aires steakhouse setting made sense of it. You understand the food differently when the context is right. Fernet and cola alongside is part of that story. Some food is just fuel. Locro, properly made, is something more. This version told the story well.
