Street food Locro — the authentic version
The best Locro I've ever had came from a street stall, not a restaurant. The intensely beefy and smoky intensity was completely different — more direct and uncompromised. chimichurri herbs was used without hesitation, the way it should be.
the asado is an Argentinian social institution as much as a cooking technique. The a Sunday asado in a friend's garden setting meant eating standing up or on a low stool, which is how this food is supposed to be encountered. Quilmes lager was sold right next to it. Don't wait to find the 'right' restaurant. Find the street version first.
