I went in with low expectations — I'd had mediocre versions before. What I found was Dulce de Leche made with real commitment to beef asado cuts and technique. The intensely beefy and smoky result was more complex and satisfying than anything I'd had before.
the asado is an Argentinian social institution as much as a cooking technique. The a Sunday asado in a friend's garden was exactly right for this kind of eating. Fernet and cola was offered as the natural choice and it elevated everything. When a dish you thought you knew surprises you completely, that's worth celebrating. Five stars without hesitation.
